Banana, Carrot and Orange Cake
4 mashed bananas
1 finely grated carrot
Juice of one orange (add in the pulp too if you like)
150ml olive oil
275g of flour (I used 150g of spelt flour and 125g self raising)
1tsp bicarbonate of soda
Preheat the oven to 180oC.
Mix together all the wet ingredients and then fold in the flour.
Transfer mixture to a lined tin (I used a small rectangular tin).
Bake for 20-25 minutes until well risen and the edges are coming away from the tin (also the cake will spring back when touched and a skewer will come out clean).
Cool on a wire rack before slicing.
